So freaking good. Only change that I made was that I used turkey instead of beef. Will definitely make this again

we loooooove this soup......... quickly shot to the top of our list......easily twice a month..... i use ground breakfast sausage in place of hamburger meat and i use 2, sometimes 3 peppers.........

I made this for supper tonight and it was SO incredibly good! I used ground turkey, two red peppers and 3 cups of white jasmine rice. I cooked the ground turkey and onion with the garlic. This will be my go to recipe for stuffed pepper soup!

I made this but used my own garden grown canned whole tomatoes and beef broth. Soup was terrific and will be made over and over this coming winter! It’s a keeper😊 thanks!!

I only have basmati rice so I added it at the same time as all the ingredients so it could cook longer. The rice soaked up all of the liquid so it’s not so much soup as it is stuffed pepper rice. I added mushrooms as well and it’s still pretty good.

This was great: halved the recipe and used ground sausage as prefer that flavor for this soup. Also used 3/4 tsp of Renaissance Garden Seasoning from Savory Spice instead of the garlic and cooked with beef broth rather than water.
