Loved it, but I added a can of Rotels (drained) and a small can of mushrooms (drained). So I added a little more cheese because my family likes spicy food,

Nice recipe! I enjoyed it! Had good flavor and was easy to make. I did add a little bit more Tomato Sauce in the meat mixture before stuffing the shells. My picky son was disappointed when he saw all the onion I put in it. But later absolutely devoured the dish! Onions and all!
