- 1 cup white rice (uncooked, could use brown if desired)
- 3/4 lb. ground beef (could opt for ground turkey)
- 1 cup mozzarella (cheese, is what we use)
- 1 tsp. onion (dehydrated, could use fresh diced)
- 1 can tomato sauce (or 1 c. spaghetti sauce)
- 1 cup sliced mushrooms (optional but a great addition)
- salt (to taste)

Good; even better with sauce made from roasted tomatoes, onion, and garlic which are blended until smooth.
I cut lg peppers in half and blanch( place in boiling water and simmer, covered in water about 10 minutes.)
