  • 8 ounces button mushrooms (cleaned and roughly chopped)
  • 4 baby spinach (packed cups)
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1/3 cup grated Parmesan cheese (divided)
  • 1/3 cup walnuts (chopped, and lightly toasted, if desired)
  • 3 tablespoons dried cranberries

    It is tasty. I wouldn’t have thought then cranberries would have worked with the other ingredients, but they did.

    Delicious, hearty, perfect for a cold, rainy day. And, best of all, guilt free! I don't like Quinoa so I substituted brown rice and I loved every bite!

    Delicious. I didn’t have nutmeg so I used cinnamon. I topped with some real maple syrup too.

    Not my favorite recipe. Too much spinach and not enough seasonings. The only saving grace for this...the toppings. And honestly, they should be mixed in with the quinoa. I won’t make this again.
