It turned out great! I wish I added more Pepper Jack cheese to add some spice, but it was still very tasty, nevertheless.

Family and friends loved these stuffed bell peppers. I also added some parsley and cilantro and mushrooms. Could use more pepper jack cheese or some pepper flakes or jalapeños for next time for some kick. Even without it the flavor is so rich and delicious. I only used 1 TB of olive oil with veggies and no oil with ground beef (85/15). Has great texture, soft and crunchy at the same time for both the veggies and the bell pepper. After the 15 min open cooking in the oven had to raise the temp to 425 to give the cheese a bit of color.
This is definitely a favorite and will be making it again!

I made it and it’s delicious! I served a homemade, refried, black bean dish with salsa and tortillas with it. Fantastic, and good for you!

Delicious! I didn't have a pan deep enough to be taller than the peppers, so I added the cheese on top at the "remove foil" instruction. Turned out great!

These were FABULOUS! Yum yummm!
Loved these made with fresh from the garden peppers stuffed with hamburger meat, cheese and seasonings. Added a dab of pasta sauce on top before adding the extra cheese. We used mozzarella. Served along side fresh green beans, sautéed squash slices in olive oil with garlic salt Parmesan cheese, along with sweet bi-colored corn on the cob. Posey county melon slices for dessert. Doesn't get any better than this for a summer meal!

It was kind of bland, but the colors were nice. I thought it didn't have enough meat, so I added some crumbled Italian sausage. Also, my family doesn't like cheese, so I omitted it.
