- 1 1/2 tsp. kosher salt
- 1 cup warm water (at least 100 degrees)
- 1 packet instant dry yeast
- 1 tsp. granulated sugar (or honey)
- extra-virgin olive oil (optional)
- 1/2 cup pitted black olives (drained)
- 1/2 cup sun dried tomatoes packed in oil

- 2 Tbsp. oil
- 12 slices provolone cheese
- 10 oz. frozen spinach (box of, thawed and squeezed really well to remove the water)
- 8 oz. roasted red peppers (if you use jarred ones, pat them dry before slicing into strips)
- 1 egg
- kosher salt
- 1 Tbsp. italian seasoning (I love Penzey's version)
- marinara sauce (warmed for serving)
