- 2 Tbsp. buttery spread (dairy-free, optional, I use MELT Organic Rich & Creamy Buttery Spread)
- 2 Tbsp. powdered sugar
- 1 tsp. vanilla flavoring (pure, or extract, or more to taste)
- 2 cups white whole wheat flour (can sub all-purpose flour or gluten-free flour blend)
- 2/3 cup sugar (can sub finely ground coconut sugar)
- 2 Tbsp. tapioca starch (or non-GMO cornstarch)
- 2 tsp. baking powder
- 3/4 tsp. salt
- 1/3 cup buttery spread (dairy-free, I use MELT Organic Rich & Creamy Buttery Spread)
- 1 tsp. lemon zest
- 1 cup lite coconut milk (canned; not milk beverage)
- 2 eggs (see post above for vegan option)
- 2 tsp. vanilla extract
- 1 lb. strawberries (stemmed and diced)
