- 1/4 cup whole wheat pastry flour
- 1/4 cup powdered sugar
- 1/2 tsp. lemon zest (divided, about 1/2 lemon)
- 1/8 tsp. kosher salt
- 6 Tbsp. cold butter (cut into small pieces)
- 4 oz. light cream cheese (softened, 1/2 block)
- 1/2 cup non fat Greek yogurt (plain)
- 1/4 cup granulated sugar
- 1 large egg (at room temperature)
- 1 tsp. fresh lemon juice (and 1/2, please don’t use the bottle!)
- 1 tsp. cornstarch (and 1/2)
- 1/4 tsp. vanilla extract
- 1/2 cup strawberry preserves (I love Smucker’s Simply Fruit)
- sweetened whipped cream (optional)
- frozen non dairy whipped topping (optional)
- strawberries (Fresh sliced, for garnish, optional)
