  • 1 pound strawberries (hulled, 1/2 lb finely chopped + extra to serve)
  • 3/4 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 cup greek yogurt
  • 1/2 cup heavy cream

    Directions

    1. Process whole strawberries with sugar, lemon juice and yogurt until smooth. Strain into a large bowl. Whip cream to soft peaks then gently fold into strawberry mixture. Add chopped strawberries. Transfer to a freezer-proof container, smooth surface and cover with plastic wrap. Freeze for 4 hours, until firm.
    2. Serve with extra strawberries.

    Delicious! The ice cream taste fresh and yummy. We checked it after 6 hours and it was a soft serve/thinner consistency. The next morning it was hard. I love ice cream as much as I love Gelato and my husband prefers ice cream. When he tried my ice cream he wasn't happy because it had a Gelato consistency.
