  • 500 grams strawberries (diced, retaining 4 for decoration)
  • 60 grams sugar
  • 1 1/2 papayas (about 45g total, cut into slices)
  • 1 lime (juiced and half zested)
  • 200 milliliters mango (pulp, or peach if preferred)
  • 1 bag ice cubes (about 500g)
  • mint (for decoration)

    Directions

    1. Dice one-quarter of the strawberries and set aside. Blend the remaining three-quarters of the strawberries in a blender with half of the ice cubes and 1/4 cup of sugar to create a purée. Pour the purée into a bowl and place in the freezer while you prepare the rest of the cocktail. Combine the papaya, lime juice, zest, remaining sugar and the mango pulp in the blender and briefly pulse. Add the remaining ice to the blender and pulse until smooth.
    2. Remove the strawberry purée from the freezer and mix in the diced strawberries. Pour into individual glasses and top with the papaya and mango purée. Decorate with the reserved whole strawberries and a sprig of mint.
