- Preheat the oven to 350°F.
- Spray a 9x5-inch loaf pan with nonstick cooking spray. Set aside.
- In large mixing bowl, use a mixer to cream together the butter, granulated sugar, and vanilla extract on medium-high speed until smooth and combined, 1-2 minutes. Add the eggs and sour cream and continue to beat, scraping down the sides of the bowl with a rubber spatula as needed, until the mixture is pale and fluffy.

Delicious! So, so yummy. I recently learned a technique through Bon Appetit to roast strawberries prior to baking them in recipes - brings out the flavor and gives a little more texture and I highly recommend for this recipe. Chop the strawberries and bake on low at 250 degrees Fahrenheit for about an hour, let them cool, then incorporate them into the batter when recipe calls to do so. Chef's kiss!

This recipe is great my family loved it the only thing I did differently was replaced the regular cream cheese for strawberry cream cheese gave it extra strawberry flavor!

Nice and simple. Followed suggestions and added more strawberries than suggested. I also added some raspberries as had some to use up. Liked it and will definitely make again.

Very moist but not much strawberry taste. I added more strawberries and 2tbsp honey the second time.

Very good, moist with gooey layer of cream cheese. Tasted like a baked strawberry shortcake with whipped cream which is awesome!

It was really good! The whole loaf was gone in less than 24 hours from my family of 4. It kind of resembles the taste of jiffy cornbread if you know what that is. I'll add a touch more sugar and a half a cup more strawberries next time.
