- 1 spring onion (thinly sliced on an angle)
- 1 fresh red chilli (long, julienned)
- 50 grams squid (dried)
- 50 grams anchovy (dried)
- 50 grams dried shrimp
- 50 grams dried scallops (soaked in water overnight and drained)
- 500 mL vegetable oil
- 100 grams garlic (finely chopped)
- 250 mL oyster sauce
- 40 grams sugar
- 25 grams chilli (fresh birds eye)
- 50 mL chilli oil
- 1 Tbsp. chilli flakes
- 100 grams shallots (fried red Asian)
