- 1 Tbsp. water
- 325 grams chicken thigh fillets (cut into thin strips)
- 2 Tbsp. oil (neutral flavoured, please not Canola, though)
- 2 garlic cloves (chopped)
- 2 tsp. red chilli (chopped)
- 2 lemongrass stalks (white bottom part finely diced)
- 1 onion (sliced thinly)
- 125 mL chicken stock
- 1 Tbsp. fish sauce
- 1 1/2 tsp. light brown sugar
- coriander (to serve)
