- 500 grams hokkien noodles (I used half a bag of the Yunion Hokkein noodles)
- 250 grams chicken thigh (chopped into bite sized pieces and marinated for 20 minutes with a bit of salt, pepper and oyster sauce)
- 12 prawns (shelled and deveined)
- 3 garlic cloves (minced)
- 1 bunch choy sum (trim the ends, chopped into 5cm lengths, washed and divided into stems and leaves)
- 1 cup carrots (finely julienned)
- 2 cups bean sprouts
- soy sauce
- oyster sauce
- 3 1/2 Tbsp. oyster sauce
- 3 tsp. light soy sauce
- 3 tsp. dark soy sauce
- 3/4 Tbsp. hoisin sauce
