Stilton and Walnut Baked Chicken

  • 1 tablespoon olive oil
  • 1 tablespoon sage (chopped)
  • 5 ounces boneless skinless chicken breasts
  • 2 3/4 ounces stilton cheese (mature, crumbled)
  • 1 1/2 ounces walnuts (coarsely chopped)

    Directions

    1. Preheat the oven to 375°F. Place the oil in a small bowl; stir in the sage. Place the chicken on a large baking sheet and season to taste.
    2. Sprinkle the cheese and walnuts on top of the chicken, dividing the mixture evenly. Use a fork to lift the sage from the oil; divide this between the chicken breasts. Drizzle over the oil.
    3. Bake for 25-30 mins until the topping is golden and the chicken is completely cooked through. Serve immediately with a crisp green salad.
