- 75 grams unsalted butter (softened, plus extra to grease)
- 175 grams muscovado sugar (light)
- 2 tsp. ground ginger
- 2 tsp. mixed spice (ground)
- 1 tsp. vanilla extract
- 3 large free range eggs
- 225 grams self-raising flour
- 380 mL caramel sauce (we used Bonne Maman confiture de caramel, from Waitrose and Ocado, but you can use any good quality caramel sauce)
