- 1/2 cup apricots (pitted and chopped, you can reconstitute dried apricots, if out of season)
- 3 Tbsp. honey
- 1 Tbsp. rice wine vinegar
- 1 Tbsp. hoisin sauce
- 2 garlic cloves (peeled and pressed)
- 1 inch fresh ginger (knob, peeled and grated)
- 1 Tbsp. hoisin sauce
- 1 pinch chile flakes (dried)
- salt (freshly ground, to taste)
- freshly ground pepper (to taste)
- 4 duck breasts
- 4 green onions (finely chopped)
- 1 Tbsp. fresh cilantro (finely chopped)
- 1/4 tsp. Chinese five-spice powder (make your own)
- 1 tsp. hoisin sauce (sticky)
- oil (for cooking either on a grill or skillet)
- 4 bun (Francese rolls or your preferred)
- cheese (sliced, I used pepper jack)
- onions (caramelized or raw, optional)
- mushrooms (crisped, HOW TO: Crisp Mushrooms, I used baby portabellos for this, optional)
