- 100 grams dark muscovado sugar
- 100 grams unsalted butter
- 250 grams spelt flour (wholemeal)
- 1 tsp. baking powder
- 1/2 tsp. bicarbonate of soda
- 3 tsp. ground ginger
- 1 tsp. ground cinnamon
- 1 tsp. mixed spice (ground)
- 1/2 tsp. cayenne powder
- 1 pinch salt (I used Himalayan pink rock salt)
- 2 apples (peeled cored and finely chopped)
- 2 medium eggs
- 125 mL buttermilk (kefir, sour milk or watered down yoghurt)
- 2 slices root ginger
- 30 grams sugar (golden, I used granulated)
- 50 mL water
