- 1 stalk lemongrass (white part grated)
- 1 btl. clam juice ( , 8 oz)
- 8 oz. white wine
- 2 inches ginger (piece of, cut into match sticks)
- 14 oz. coconut milk (good quality, shake the can to mix the fat with the liquid)
- 1/2 cup Thai red curry paste (depends on your spice level)
- 1 Tbsp. fish sauce
- 1 tsp. sugar
- 1 handful bean thread noodles (placed in bowl, topped with boiling water and cooked on low heat for a few minutes)
