- 1 tsp. vegetable oil
- 2 chayote (medium-sized, cut in fine strips, can substitute summer squash)
- 1/2 serrano chili pepper (finely chopped)
- 1 Tbsp. coriander (minced)
- salt (as desired)

Directions
- Preheat a large cooking pot on high and add the vegetable oil.
- Add the chayotes and serrano pepper once the vegetable oil is hot. Let it cook for 2 minutes.
- Stir the chayotes occasionally and add salt. Let it cook for 6 minutes on low with the cooking pot lid on.
- Add the coriander and let it cook for 1 minute.
- Turn off the stove and serve it directly on plates as soon as its ready.
