- 750 grams beef bones
- 1 onion
- 1 Tbsp. black peppercorns
- 3 cloves garlic (smashed)
- 3 Tbsp. worcestershire sauce
- 3 liters water (8.5~12.5 cups)
- 300 grams beef (topside)
- 2 Tbsp. flour
- 1 onion (diced)
- 2 leeks (cut into thick chunks)
- 200 grams mushrooms (about 2 dozen, cut into thick slices)
- 2 carrots (cut into thick chunks)
- 2 sprigs fresh rosemary
- 1 can guinness (or equally dark beer, 320ml)
- 1.5 liters stock (a little over 6 cups)
- 1 Tbsp. tomato puree (or a spoonful of ketchup if you are desperate)
- 1 Tbsp. cornstarch (mixed with 3 tbsp water)
- 3 Tbsp. olive oil
- 3 cups flour
- 2 Tbsp. honey
- 1 tsp. sea salt
- 1 tsp. baking powder
- 3/4 cup pork fat (/lard, shortening or butter)
- 3 oz. ice cold water
