- 1 tsp. green peppercorns (cracked)
- 1/2 lb. top round steak (diced)

- 1 cup shallots (sliced)
- 1 head garlic (split in half crosswise)
- 1/2 cup button mushrooms (sliced)
- 2 cups red wine
- 1/2 cup port wine
- 2 liters veal stock
- 1 cup bone marrow (soaked overnight in ice water and small diced)
- 1 cup white wine
- 1 cup white wine vinegar
- 3 oz. sliced shallots
- 1 Tbsp. black peppercorns
- 2 bay leaves
- 1/2 bunch thyme
- 3 egg yolks
- 1 1/2 lb. butter
