- 1 Tbsp. grated lemon zest (tbsp)
- 1/4 cup lemon juice (freshly squeezed, about 1 medium lemon will provide the juice and zest for this whole recipe)
- 1/2 tsp. lemon extract
- 2 cups gluten free flour (low-FODMAP, I use Authentic Foods GF Classical Blend- see my bake-off blog for reason why!)
- 2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 tsp. xanthan gum (if not added to your low-FODMAP flour choice)
- 1 cup granulated sugar
- 1/2 cup canola oil
- 3 large eggs
- 3/4 cup milk (low-FODMAP, almond, coconut for dairy-free version or lactose-free milk)
- vegetable shortening (for greasing)
- 1 1/2 cups powdered sugar
- 3 Tbsp. lemon juice (freshly-squeezed)
- 1 tsp. lemon extract
- 2 Tbsp. coconut cream (low-FODMAP canned, or other low-FODMAP milk, such as almond milk for dairy-free version to thin as needed)
