- 4 cups vegetables (chopped, such as baby bok choy, snap peas, asparagus, or bean sprouts)
- 3.5 oz. shiitake mushrooms (sliced)
- 4 oz. dried rice noodles (cooked according to package instructions)
- 4 cups unsalted chicken stock
- 2 cups water
- 1/2 inch ginger root (piece of, peeled and sliced into 4 rounds)
- 8 Tbsp. teriyaki sauce (Stonewall Kitchen Sriracha, depending how spicy you want your soup)
- 2 tsp. sesame oil
- 1/4 cup fresh lime juice
- 1/2 tsp. salt (or as needed)
- 2 Tbsp. scallions (chopped)
- 2 Tbsp. fresh cilantro (chopped)
- 1/2 cup cherry tomatoes (cut in half)
- 1 lb. shrimp (peeled and deveined)
- 1/4 cup peanuts (toasted unsalted, chopped, for garnish, optional)
