- 3 cups eggs (beaten, or 3/4 full fat canned coconut milk for vegan eaters)
- 1 1/4 cups panko bread crumbs (may use a gluten free bread crumb if needed)
- 1/2 cup grated Parmesan cheese (omit if vegan)
- 1 tsp. paprika
- 1 tsp. salt (+ pepper)
- 1/2 cup Sriracha
- 1/4 cup hot sauce (I like using Franks hot sauce)
- 6 Tbsp. butter (melted vegan eaters can use vegan butter or olive oil)
- 1 tsp. soy sauce (low-sodium, OR fish sauce)
- 1/2 cup plain greek yogurt
- 1/3 cup blue cheese (crumbled)
- 1 Tbsp. fresh lemon juice
- 1/8 tsp. garlic powder
- salt
- pepper
- 1/4 cup fresh cilantro (chopped)

Yummy, but I mixed the siracha into the egg to embed the taste into the cauliflower. Also I've served it without the custom sauce and it's great with just ranch
