- 1 Tbsp. basmati rice (or uncooked long grain)
- 50 grams coriander seeds
- 25 grams cumin seeds
- 25 grams fennel seeds
- 7.5 cms cinnamon stick (/3in piece)
- 1 1/2 tsp. fenugreek seeds
- 1/2 tsp. cloves
- 1/2 tsp. cardamom seeds (from about 10 green cardamom pods)
- 1/2 tsp. black mustard seeds
- 1 tsp. black peppercorns
- 3 chillies (dried red Kashmiri)
- 2 Tbsp. coconut oil (or vegetable oil)
- 15 cms cinnamon stick (/6in, broken into smaller pieces)
- 10 cardamom pods (bruised)
- 10 cloves
- 350 grams onions (/12¼oz, or shallots, peeled, cut in half, thinly sliced)
- 40 grams garlic (/1½oz, peeled, crushed to a paste with the edge of a knife)
- 25 grams fresh root ginger (peeled, finely grated)
- 2 Tbsp. curry powder (roasted Sri Lankan, see above)
- 1 tsp. chilli powder (Kashmiri)
- 1 tsp. ground turmeric
- 200 grams canned chopped tomatoes
- 20 fresh curry leaves
- 4 pandan leaf (x 4cm/1½in pieces, available from some Asian grocers)
- 1 lemongrass stalk (tough outer leaves removed, cut in half, lightly bruised with the edge of a knife)
- 3 chillies (green cayenne, split open lengthways)
- 1 tsp. salt (or to taste)
- 400 mL coconut milk (canned)
- 1 lb. cooked turkey (12¼oz cold, cut into small pieces)
- 1 Tbsp. freshly squeezed lime juice
- salt
- freshly ground black pepper
- steamed rice (to serve)
