I made this today. There is no indication of turning the heat down from Medium High once the sugar/water boiled and after adding the milk, vanilla and salt, I cooked and stirred until color changed, but I think 20 minutes was too long. The texture changed from airy and bubbly and puffy, to mealy. I didn't burn it, but next time I'll cook it for maybe 15 minutes or lower the heat. No sheet pan size was indicated, so I used an 11x17, which was too big. Tastes good, but texture's off. I will try again. Thank you for sharing!
