- 1/4 tsp. ground cinnamon
- 1/2 tsp. cayenne pepper (optional)
- 3 tsp. tamarind paste
- 2 jalapeno peppers (sliced, or 2 serrano peppers if you prefer more heat)
- 1 inch ginger (peeled, minced)
- 3 garlic cloves (minced)
- 1/2 onion (medium, chopped finely)
- 1 Tbsp. lemon juice (optional)
- 3 bay leaves
- 1 Tbsp. sugar
- salt (more, to taste)
