- 1 onion (chopped)
- 1 large garlic clove (finely chopped)
- 1 tsp. fresh ginger (grated)
- 1 tsp. Garam Masala
- 1/2 tsp. ground cumin
- 1/2 tsp. ground coriander
- 450 grams squash (or sweet potatoes, chopped)
- 400 grams chickpeas (drained)
- 200 mL vegetable stock
- 400 grams chopped tomatoes
- 125 mL light coconut milk
- 1 pinch sugar (optional)
- 100 grams frozen spinach
- 10 filo pastry (sheets)
- green salad (Lightly dressed mixed, to serve)
- 3 cms Cake (loose-bottomed)
