- 2 lb. zucchini squash (sliced, about 7 cups)
- 2 onions (medium, halved and sliced, about 2 cups)
- 1/4 cup pickling salt
- 2 cups white vinegar
- 2 cups sugar (Start with 1 cup of sugar; pour the vinegar mixture over the squash and onions and stir. Taste and add more sugar, as desired)
- 1 tsp. celery seed
- 1 tsp. turmeric
- 2 tsp. mustard seed
