We have quite a few squash from our garden this year, and I was looking for other squash dishes besides sautéing it. This was delicious & what I was looking for!

I keep getting squash in my weekly farm boxes and I'm not a fan of either preparing it nor eating it. :/ But...I know it's healthy, so I came here looking for a new way to make it. This is the first time everyone loved squash AND was requested again for future meals. I did make it a dairy free version and didn't have the crackers so substituted gluten free breadcrumbs; it was still great.

I was trying to find a squash casserole like my mom’s and this was perfect. I used ritz crackers like the recipe but my mom always used crushed corn flakes so next time I will do that. I’m so glad I found something that reminds me of my mom

it turned out fine. i added more crackers than directed and cooked the squash longer than directed.

This squash casserole was delicious. I added a half sleeve of Ritz crackers to lessen the fluid. That dried up the mushiness others have noted. I'll be making this again.

It was really mushy and had no flavor it needed to be salted at table side to be palatable and I try to deter extra salt usage I’d skip this one

This was yummy. However I did add zucchini and grated instead of sliced. It needs a bit more of the seasonings. Will make again.

This was delicious. I followed all the directions except putting it in a 9x13 pan to bake in. Since the pan I was cooking the squash in was oven safe, I simply mixed everything in that same pan and popped it in the oven. Even my husband, who generally hates casseroles, loved this recipe.

Delicious! I added sliced mushrooms to the squash and onions when they we're cooking. The cayenne gave it a kick. Next time I might add one more egg to give it a little more firmness when it's done. The Ritz crackers on top were yummy!

I fried a few slices of bacon and sauteed the squash and onion in the bacon grease along with some red bell pepper for color. I added the crumbled bacon to the mixture before baking. Served with a little hot sauce...delish!

I made this for Christmas Day and doubled the recipe. The only change I made was instead of adding the melted butter the second time, I mixed it with the crumbled ritz crackers for the topping. It was a big hit!

Very yummy. I didn't have ritz crackers so I used crumbled Frosted Flakes! Very good!
