- 1 cup truRoots Organic Sprouted Green Lentils
- 1/2 cup red bell pepper (finely diced)
- 1/2 red onion
- 2 Tbsp. extra virgin olive oil
- 2 Tbsp. white wine vinegar
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 1/4 cup fresh flat leaf parsley (chopped)
- 1/2 tsp. fresh rosemary (chopped)

Directions
- COOK sprouted lentils according to package directions. Drain well.
- COMBINE warm lentils, bell pepper, red onion, oil, vinegar, salt and pepper in medium bowl. Toss well. Cool to room temperature. Stir in parsley and rosemary just before serving.
