  • 1 cup truRoots Organic Sprouted Green Lentils
  • 1/2 cup red bell pepper (finely diced)
  • 1/2 red onion
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup fresh flat leaf parsley (chopped)
  • 1/2 teaspoon fresh rosemary (chopped)

    Directions

    1. COOK sprouted lentils according to package directions. Drain well.
    2. COMBINE warm lentils, bell pepper, red onion, oil, vinegar, salt and pepper in medium bowl. Toss well. Cool to room temperature. Stir in parsley and rosemary just before serving.
