- 23 grams oil (– use a neutral flavor such as sunflower or algae oil but not coconut since it hardens at room temperature.)
- 12 grams coconut flour (– Bob’s Red Mill, 10g from the bag, 2g of the colored sprinkles)
- 1 g xanthan gum (or konjac root, does not need to be calculated)
- 0.5 grams baking powder
- 0.5 grams vanilla extract (an additional 0.5 grams of almond extract adds a great “cake” flavor)
- 32 grams egg whites (1 large, whipped into soft peaks)
- 1/2 Tbsp. water
- 1 pinch salt
- 5 grams Truvia (was used for testing)

It was very flat. I used the weight measurements so it was more accurate too. Barely thick enough for 1 layer. It was flat right out of the oven. Puffed a little bit but barely. Used a small pan too
