- 4 eggs (whisked)
- 4 slices bacon (diced)
- 6 cups rice (cooked leftover, do not use fresh rice–if you must, cook it an hour in advance and spread it onto a cookie sheet and place in the freezer for 20 minutes)
- 1 red onion (small-medium, thinly sliced)
- 8 cloves garlic (minced)
- 2 Tbsp. minced ginger
- 4 roots (green garlic, they look like scallions, which you can sub in a pinch, cleaned and chopped, white and light green parts separated from dark green)
- 4 shitake mushrooms (good handfuls, cleaned and stems removed, thinly sliced)
- 4 leaves (good handfuls of komatsuna, stems removed and roughly chopped, can sub spinach)
- 10 oz. frozen peas (or fresh equivalent)
- 1 handful snow peas (if you can get them, it’s too early here so I just threw some frozen broccoli in)
- 3 Tbsp. soy sauce
- 1 Tbsp. dark sesame oil
- 1 Tbsp. honey
