- 2 garlic cloves (minced)
- 1 cup orange bell peppers (pieces)
- 1 cup red bell peppers (pieces)
- 1/2 lb. asparagus (trimmed, cut on diagonal into 3/4-inch pieces)

- freshly ground black pepper
- 4 green onions (thinly sliced)

Okay. A bit bland. Some italian spices and a bit of garlic salt improved it. I used butternut squash instead of beets, and that may have been it.

This is my favorite dish to bring to any pot luck event. Everyone loves it...even people who don't love quinoa. If you have trouble finding gold beets I would NOT advise using red beets as they have a different taste plus they'll color the salad red. I would just skip the gold beets if you can't find them.
