- 2 red bell pepper (sliced thin)
- 1 yellow onion (or medium white, thinly sliced)
- 3 garlic cloves (minced)
- 1 Tbsp. ground ginger (freshly)
- 1 bunch asparagus (woody ends removed, sliced into 1" pieces )
- 2 Tbsp. green curry paste (I like Thai Kitchen brand )
- 14 oz. unsweetened coconut milk
- 1/2 cup frozen peas
- 1 tsp. brown sugar
- 1 tsp. rice vinegar
- 2 tsp. soy sauce (or tamari for gluten-free version )
- 1/2 cup thai basil (can sub regular basil if you can't find Thai )
- jasmine rice (for serving )
