- 2 English cucumbers (seeded and chopped)
- 1 lemon (zested and juiced, about 4 Tbsp juice)
- 2 Tbsp. olive oil
- 1 tsp. honey
- 1/2 tsp. kosher salt
- 1/4 tsp. fresh ground black pepper
- 1 shallot (finely chopped)
- 2 Tbsp. fresh dill (chopped)
- 2 green onions (chopped fine)
- 1/4 cup fresh parsley (chopped)
- 1/2 cup crumbled feta
- 1/4 cup kalamatas (chopped pitted)
