  • 1 avocado (large, peeled, stone removed)
  • 2/3 cup reduced fat cream cheese (at room temperature)
  • 1 tablespoon lemon juice
  • 1 loaf white bread (unsliced)
  • 7 ounces sliced ham
  • 1 large carrot (finely grated)

    Directions

    1. Mash avocado, cream cheese and juice in a large bowl until smooth. Using a large serrated knife, remove crust from bread. Cut bread lengthwise into 4 equal slices. Using a rolling pin, flatten each slice to about 1/4 inch thick.
    2. To make 5 spirals, spread a piece of bread with a quarter of the avocado mixture, leaving a 1/4 inch border. Top with a quarter of the ham, in a thin layer, overlapping ham slightly. Top with a quarter of the carrot, in a thin layer. Roll up to enclose filling. Cut into 5 equal slices. Repeat with remaining bread and ingredients.
