In last week's Pizza Lab, I promised a calzone recipe. Well, here it is!
Ingredients

- 11 oz. bread flour (plus more for dusting surfaces)
- 2 tsp. sugar
- 0.15 oz. salt (about 1 1/2 teaspoons)
- 1 tsp. instant yeast
- 4 Tbsp. extra virgin olive oil
- 6.5 oz. lukewarm water (1 cup minus 3 tablespoons)
- 6 oz. baby spinach
- 8 oz. provolone cheese (cut into small cubes)
- 4 oz. pepperoni (or sopressata slices, cut into 1-inch by 1/2-inch pieces)
- 2 oz. Parmesan cheese (finely grated)
