    I have only made plain potato latkes before so this was a nice change. I found them a little rich so would be inclined to reduce the feta cheese a bit another time. Enough to freeze for another meal!

    My Dad is Greek and my Italian Mom would make Spanakopitas for us around the holidays. This is a great twist for Chanukah on this traditional Greek dish. I only substituted plain yogurt for the sour cream and served it as a side... It came out delicious and froze the rest as there is only two of us.
