Ingredients

  • 2 beets (medium)
  • 2 eggs
  • 1 carrot (shredded)
  • 2 cups spinach (washed and chopped)
  • 1 cup lettuce
  • 12 almonds
  • salad dressing (whichever kind you like)

    Directions

    1. Cook the beets by placing them in a pot of cold water and salt. Heat up the water over medium flame and cook for 30–40 minutes. Once cooked, peel and chop the beets.
    2. Hard boil the eggs and once ready (approx.15 min.) peel and slice them.
    3. Mix all of the vegetables in a large bowl, add the beets and eggs and mix everything together again.
    4. Top off the salad with the almonds and the salad dressing of your choice.

    Yummy salad! I added celery as well for some extra crunch. I only used spinach and omitted the lettuce. I served it with a garlic-lemon dressing and it was a wonderful light meal. I would definitely make this recipe again.
