- 2 beets (medium)
- 2 eggs
- 1 carrot (shredded)
- 2 cups spinach (washed and chopped)
- 1 cup lettuce
- 12 almonds
- salad dressing (whichever kind you like)

Directions
- Cook the beets by placing them in a pot of cold water and salt. Heat up the water over medium flame and cook for 30–40 minutes. Once cooked, peel and chop the beets.
- Hard boil the eggs and once ready (approx.15 min.) peel and slice them.
- Mix all of the vegetables in a large bowl, add the beets and eggs and mix everything together again.
- Top off the salad with the almonds and the salad dressing of your choice.
