- 8 slices bread
- spinach leaves (washed and chopped, as much as needed)
- 1/2 avocado
- 150 grams goat cheese
- 1/2 cup parsley (finely chopped)
- 1/3 cup basil
- 1/4 cup mixed nuts
- 3 Tbsp. olive oil

Directions
- Prepare a pesto sauce by blending the nuts, olive oil, basil, and parsley in a food processor. Set aside for later.
- Heat up a frying pan over low–medium heat.
- Add a layer of pesto sauce to each slice of bread.
- Place some spinach, avocado, and cheese on top of the pesto sauce and top with the other bread slice.
- Place each sandwich in a frying pan, lightly toast both sides, and serve.
