  • 1 1/2 cups mozzarella (I used a mozzarella blend from Costco; use regular or part-skim Mozzarella, your choice)

    We didn't have any Spike Seasoning (we probably won't get any because there are some ingredients that would harm or health in it) and we used smoked gruyere instead of mozzarella, so it wasn't exactly the results the original recipe would get, but it was still pretty good. We also added pancetta, which was really tasty. We'll probably make this for Easter breakfast this year.

    Easy and delicious. I make it a day before and refrigerate for a quick and nutritious breakfast. I add mushrooms to the spinach and sometimes I switch from mozzarella to cheddar. Made it a little less healthy by adding a little breakfast sausage or bacon. I love this!

    Excellent recipe. i would recommend to all my friends. I did it at home for a bruch and invited some friends and everybody asked for the recipe. They said it was delicious

    Decent. Wish it would have been more substantial - maybe more eggs would help. Mine seemed quite flat and on closer inspection so does the photo. I added a few cherry tomatoes that needed eating which worked well.

    Made it for the weekend so that my family was able to heat and eat when they got up and getting ready for work. Freezes really well a great for a snack or meal at night when you do not feel like making anything.

    I made this recipe on a weekend as one of my ahead meals for the week. Although, it's classified as a breakfast recipe I had this for dinner, so easy to cut in slices I heated it in the microwave, topped with onion chutney it was delicious. The next time I had the reminder with a green salad, and it was still delicious. I will definitely be making it again and again. It also freezes really well, great for days when I don't feel like cooking after a hard day at work.
