  • 1 teaspoon oil
  • 1 leek (chopped)
  • 2 carrots (halved lengthwise, sliced)
  • 2 potatoes (diced)
  • 1 cup green lentils (rinsed)
  • 3 cloves garlic (crushed)
  • 1 vegetable stock (cube)
  • 6 cups boiling water
  • 1 bunch spinach (washed, shredded)
  • 1/3 cup lemon juice

    Directions

    1. Heat oil in a large pot over medium heat. Cook leek for 5 mins, stirring, until soft.
    2. Stir in carrot, potato, lentils and garlic. Dissolve stock cube in boiling water and add to pan. Simmer, covered, for 45 mins, until lentils are tender.
    3. Add spinach and simmer for 1 min. Stir through lemon juice, season and serve.
