  • 2 tablespoons olive oil
  • 2 bunches fresh spinach (trimmed and chopped)
  • 6 green onions (sliced)
  • 4 eggs (lightly beaten)
  • 1 1/4 cups crumbled feta cheese
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1/4 teaspoon ground nutmeg
  • 8 sheets phyllo dough
  • 1 stick cooking spray (or 4 tbsp butter, melted)

    Directions

    1. Preheat the oven to 350°F. Grease an 8-inch square baking dish. Heat oil in a large skillet on high heat. Sauté spinach and onions for 4-5 mins, until spinach has wilted. Cool slightly. Place mixture in a strainer; press to remove excess liquid.
    2. Transfer spinach mixture to a large bowl. Stir in eggs, cheeses, parsley and nutmeg. Season to taste.
    3. Spray 4 sheets phyllo with cooking spray or brush with butter. Fold each in half. Layer in prepared pan. Spoon filling over phyllo. Repeat layering with remaining 4 sheets phyllo, placing over filling to cover.
    4. Bake for 20-25 mins, until crisp and golden. Cut into squares and serve with salad.
