  • 2 tablespoons olive oil
  • 2 bunches fresh spinach (trimmed, chopped)
  • 4 spring onions (finely sliced)
  • 4 large eggs (lightly beaten)
  • 8 ounces feta cheese (crumbled)
  • 5 ounces ricotta cheese
  • 2 ounces Parmesan cheese (grated)
  • 1 ounce parsley (chopped)
  • 1/4 teaspoon nutmeg
  • 8 sheets phyllo pastry
  • 4 tablespoons butter (melted)
  • salad (to serve)

    Directions

    1. Preheat oven 375°F. Lightly grease an 8-inch square casserole dish or cake pan.
    2. For the filling, heat oil in a large frying pan on high. Sauté spinach and onions 4-5 mins, until spinach is wilted. Drain well and cool slightly. Transfer to a large bowl and mix in eggs, cheeses, parsley and nutmeg. Season to taste.
    3. Brush 4 sheets of phyllo with butter and fold in half. Layer in pan and pile with filling. Brush remaining phyllo with butter, fold in half and layer over filling. Bake 20-25 mins, until crisp, set and golden. Slice and serve with salad.
