- 1 1/4 cups sweet yellow corn (about 2 ears)
- 4 oz. fresh spinach (chopped)
- 8 oz. marinated artichoke hearts (chopped)
- 1 1/2 cups wheat (white whole, regular flour)
- 1 tsp. baking powder
- 1 Tbsp. brown sugar
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 cup milk (use coconut or almond milk for Vegan version)
- 8 oz. brie (chopped, I left my rind on the brie - opt out of the brie for Vegan)
- 1/3 cup canola oil (for cooking)
- 15 oz. full fat coconut milk (cold, may use heavy cream, but I personally love using coconut milk)
- 3 Tbsp. honey
- 2 jalapenos (seeded if desired + chopped)

These were great. Used thawed frozen spinach with the water wrung out of it and frozen corn, heated in the microwave to just room temp. The cold coconut milk trick was fantastic. I think I'll do that another time for a dessert (without the jalapenos!) as an alternative to whipped cream (same calories per Tbsp, but coconut milk is higher in saturated fat...so as a special treat!)
