- 6 large eggs (3 whole, 3 egg whites)
- 1 pie crust (pre made, or homemade...whatever floats your boat)
- 2 bunches fresh spinach (if you must you can use 1 package of frozen, but it's not quite the same)
- 3 cloves garlic (fresh, minced)
- 1/2 onion (finely chopped)
- 2 cups shredded cheese (mozzarella/cheddar mixed)
- 1 cup crumbled goat cheese
- 1 cup milk (or rice milk if you're not doing dairy)
- salt (/pepper to taste)
- 1 tsp. olive oil

I only used one bunch of spinach and one less egg and found the filling too much to fit into a large pie shell. Next time I would also place the spinach, onion mixture in the pie shell and then pour the egg, cheese mixture over top.

It's delicious, both warm and cold! I used a combination of soft goat cheese and cottage cheese and it was great too.
