I had to cook it longer because the chicken breast was extra thick but other than that this turned out great! Not a lot of ingredients which made it easier to prepare!

I made it with wilted spinach and kale. I also added mozzarella and cheddar cheeses. I made a bacon cauliflower side dish to go with it. I cooked it in my air fryer.

Big success, a definite winner and on the "Favourite' list now. I served it with roast potatoes. I added a little hot paprika, nutmeg and half an onion (really finely chopped) to the spinach mix. I also created a little sauce by putting tomato puree mixed with Sour Cream on the bottom of the baking dish! Worked really well!

This recipe was easy to make and came out deliciously perfect. I did add a little salt and pepper to the spinach mixture before stuffing the chicken. I wish I had pounded my chicken more to make it flatter so that it had space for more filling. I served this with rosemary roasted potatoes and asparagus. My entire family loved it.
