this is great recioe. i think i could even eat it for breakfast I dont usually omit or change things in a recipe the first time i nake it but felt that the butter was unnecessary. There was a lot of fat in the recipe because of the cheese.
this is a recipe where options are endless - instead of spinach one could use shredded zucchini or chopped broccoli. Change the kind of cheese. Add some halved grape or cherry tomatoes, some grated carrot, chopped bell pepper. you pick.
